Each course has been created exclusively for the evening by The Peregrine culinary team, led by Executive Chef, Noel Enright, with every pairing carefully considered to reveal the character, heritage and sense of place behind the wines.

For more than six centuries, the Antinori family has been part of the story of Italian wine.
Across generations, that story has been shaped by an enduring respect for tradition alongside a willingness to explore what wine can become. From the celebrated vineyards of Tuscany to estates across Italy, the Antinori name has become synonymous with a distinctive approach to winemaking, rooted in place, patience and an understanding that every bottle begins with the land from which it came.
From Antinori’s Tenuta Bocca di Lupo estate in Puglia, Pietrabianca 2025 is a blend of 90% Chardonnay and 10% Fiano, bringing together richness and freshness. Elegant and vibrant, the nose reveals citrus, ripe pear, nectarine and white melon, complemented by delicate hints of vanilla. The palate is fresh and structured, with a distinctive mineral character and a refined, savoury finish.
Crafted from 100% Nebbiolo in the heart of Piedmont, Prunotto Barolo 2022 is a classic expression of one of Italy’s most prestigious wine regions. Complex and elegant, the nose reveals rose petals, red fruits and delicate spice. The palate is full and beautifully balanced, with silky tannins and refined structure, leading to a rich, persistent finish.
One of Italy’s most celebrated Super Tuscans, Tignanello 2022 is predominantly Sangiovese, complemented by Cabernet Sauvignon and Cabernet Franc. The wine is rich and beautifully balanced, with aromas of ripe cherry, black cherry and pomegranate, lifted by violet and subtle balsamic notes. The palate is structured yet elegant, with supple tannins, vibrant freshness and gentle notes of vanilla and spice, leading to a long, refined finish.
A refined sweet wine from Antinori’s Castello della Sala, produced from grapes touched by Botrytis Cinerea, or noble rot, which naturally concentrates their sugars and aromas. Elegant and aromatic, the 2024 vintage offers notes of pineapple, mango and papaya, layered with dried apricot, yellow peach, candied citrus and fresh ginger. The palate is enveloping yet vibrant, with sweetness beautifully balanced by fresh acidity, leading to a long, harmonious finish.

Around the table, the wines of Antinori meet the produce and cooking of our own corner of Ireland, creating an evening that connects two places through food, wine and the stories behind them.
Joining us in Killarney for this very special evening is Andrea Totis, Export Manager for Marchesi Antinori and an international ambassador for one of Italy's most celebrated winemaking families.
Andrea represents Antinori around the world, hosting tastings and wine dinners that bring guests closer to the estates, vineyards and people behind each bottle. His knowledge extends across the remarkable Antinori portfolio, from the historic vineyards of Chianti Classico to Bolgheri, Umbria and beyond.
Throughout the evening at The Peregrine, Andrea will guide guests through the wines selected for dinner, sharing the stories behind their origins, the character of their terroir and the philosophy that has shaped Antinori across generations.

Tickets & Payment
Full payment is required at the time of booking. All tickets are non-refundable once purchased.
Ticket Transfers
Tickets are transferable and may be passed to another guest should you be unable to attend. We kindly ask that The Killarney Park is notified in advance of any change to the attending guest's name.
Cancellations & No-Shows
As places are limited and the event is specially prepared in advance, refunds cannot be provided for cancellations, non-attendance or late arrival.
Dietary Requirements & Allergies
Please advise us of any allergies, intolerances or dietary requirements at the time of booking. While every effort will be made to accommodate dietary requirements, the nature of the event and its specially designed menu may mean that certain requests cannot be accommodated. Advance notice is essential.
Wine Pairing
The experience includes a curated selection of wines served throughout the evening. Wines, vintages, producers and menu items may be subject to change due to availability. Where necessary, a suitable alternative of a comparable standard will be provided.
Alcohol
Alcohol will only be served to guests aged 18 years or over. The Killarney Park reserves the right to request proof of age and to refuse the service of alcohol where appropriate, in accordance with Irish licensing laws and responsible service practices.
Arrival
Guests are kindly requested to arrive at the stated event time. As the dinner will follow a carefully timed sequence of courses and wine pairings, late arrivals may result in elements of the experience being missed.
Changes or Cancellation by The Killarney Park
In the unlikely event that The Killarney Park is required to cancel the event, guests will be offered a full refund or, where applicable, the opportunity to transfer their booking to an alternative date. The hotel reserves the right to make reasonable changes to the event format, menu, wines, timings or participating hosts where circumstances require.
