The food
As the year turns, the dinner menu evolves. Award-winning Executive Head Chef Eric Kavanagh and his team work passionately behind the scenes to develop original dishes based on the very best produce their local suppliers can offer from day to day. This is true ingredient-led menu design—a rousing creative challenge that sparks feats of alchemy in the kitchen. What arrives at your table are exquisite plates designed to enchant your senses and ignite your imagination with distinctive flavours, novel pairings and exciting presentations.
Every morning, The Peregrine opens to give our hotel guests and cherished locals the best possible start to their day: a sumptuous breakfast cooked to order and served in gracious style. On the first two Sundays of each month, the restaurant celebrates the refined ritual of Afternoon Tea, featuring delicate savouries and indulgent treats from Head Pastry Chef and Chocolatier Dinesh Mauree.

The design
The restaurant’s enchanting design, by the world-renowned Kim Partridge Interiors, provides a stunning backdrop for romantic dinners and small, joyful gatherings of friends and family. The aesthetic, like the menus, pays homage to the National Park. Earthy tones, hand-painted murals and soft fabrics echo the beauty of the park’s ancient forests, and the authentic work of artisan craftsmanship is everywhere, grounding the space in the natural world. The gentle curves of the oval cocktail bar and the restaurant’s elegant banquettes and atmospheric horseshoe booths create a sense of organic flow and movement. Elaborate coved ceilings draw the eye up to the crystal chandeliers that glimmer overhead, while contemporary mood lighting casts a spell of calm and comfort over the room, inviting intimate conversation.
The ethos
The Peregrine is named after the National Park’s most important, protected bird species. Not long ago, Ireland’s peregrine population was in danger. The beautiful, fabled peregrine falcon is said to be the swiftest animal on the planet, but it couldn’t outfly the environmental pressures that threatened it. It was saved from the brink of extinction thanks to careful, conscious decision-making and precious sanctuaries such as the National Park. Today, the peregrine falcon has recovered enough to be green-listed as a species of least concern in Ireland.
The story of the peregrine falcon is a story of hope and optimism, of the wild beauty and resilience of nature, and of the power we have to make choices that matter. It is a lovely metaphor that resonates with our constant quest for sustainability in The Peregrine and throughout The Killarney Park. We make conscious choices every day to reduce our impact on the environment. We strive to limit food miles, eliminate food waste, minimise our energy and water consumption, and remain vigilant and thoughtful about how we use our resources.
